Fluffy Canadian Pancakes - Makes 34 1/4 cup measure pancakes

Recipe Ingredients for Canadian Pancakes

2 cups all-purpose flour
2 tablespoons baking powder
2 tablespoons sugar
1 teaspoon vanilla
2 cups milk
3 egg yolks
6 egg whites

Recipe Directions for Canadian Pancakes

  1. In a medium bowl, combine flour and baking powder and sugar. Stir in milk, vanilla and egg yolk until smooth.

  2. In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.

  3. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.
