Recipe Ingredients for Camper's Delight

1 pound salmon fillet with the skin on
1/2 cup white wine
1 medium lemon
1/4 tsp. salt
1/2 tsp. black pepper
1/2 tsp. garlic powder or 1 tsp. minced garlic
1/4 tsp. dried thyme
2 tbsp. olive oil
4 red potatoes
2 green onions
1 pound frozen green beans
1 tbsp. Minced garlic
1 medium Red bell pepper
1/4 tsp. Salt
1/2 tsp. black Pepper
1/4 tsp. dried thyme

Recipe Directions for Camper's Delight

  1. Rub olive oil all over salmon including the skin. Mix salt, pepper, and garlic powder to make a rub and massage it into the meat side of the fish, not the skin. Place salmon in a Ziploc bag and add the juice of one lemon and white wine. Store on ice or in a refrigerator for up to 2 hours. Lay salmon skin side down on non-stick aluminum foil and grill covered on medium high heat for 10 minutes. Gently slide your spatula between the meat and skin to serve.

  2. Lay out a 2?x2? sheet of aluminum foil. Pile your potatoes, onion, bell pepper, and green beans in the middle. Sprinkle your veggies with seasonings and olive oil. Mix your veggies with your hands until your veggies are coated evenly. Center your pile in the middle of the aluminum foil. Seal the foil in the middle and roll up the ends to create a foil pack. Grill on medium high heat for 30 minutes or bake in a 350 oven for 30 minutes.
