a lower fat, lower calorie version of Camp Amigo's original, for those of us not climbing trees and raiding cabins.

Recipe Ingredients for Camp Less-Girth Baked Oatmeal

1/2 cup vegetable oil
1/2 cup unsweetened applesauce
1 cup Splenda No Calorie
1 tsp. salt
4 tsp. Baking powder
6 cup quick oats (not instant)
4 eggs
2 cup milk, skim
3 tsp. cinnamon
1 tsp. fresh ground nutmeg
2 tsp. vanilla extract

Recipe Directions for Camp Less-Girth Baked Oatmeal

  1. beat eggs and oil until yellow and glossy

  2. add in applesauce (or any pureed fruit you like...could be pureed pumpkin, etc. )

  3. Mix together in a separate bowl the Oats, baking powder, splenda, and spices.

  4. Add the milk, 1 cup at a time.

  5. Bake at 400 for 30-40 min.
