Tasty Quiche recipe makes 2 pies, one for now, and one to warm up easily for later!

Recipe Ingredients for Camille's Spinach Quiche

2 tbs Extra virgin olive oil
1 onion, chopped
1 tsp garlic
6 oz shredded Swiss cheese
6 oz shredded Cheddar cheese
5 eggs
1 cup milk
10 oz spinach, frozen, chopped
2 pie crusts, no lard

Recipe Directions for Camille's Spinach Quiche

Dice onions and saute in EVOO and garlic. Add thawed, drained spinach to mix and remove from heat. Add swiss cheese and half of cheddar cheese to spinach mix and stir well. Mix eggs and milk together and pour into cheese spinach mix. Spoon into pie crusts and place pies on cookie sheet. Bake at 375 for 15 mins, then top each pie with remainder of cheddar cheese. Return to oven and bake 35-40 mins or until set and lightly golden. Let stand 10 mins before cutting.
