This is a delicious, moist banana zucchini bread recipe I came up with that's as easy as 1-2-3. Using applesauce instead of oil keeps it moist as well as low fat. It's also very tasty with walnuts and raisins added. This recipe makes 2 loaves, and is based on a 1 inch thick slice.

Recipe Ingredients for Camille's Easy B.Z. Bread

1 cup applesauce
1 cup sugar
1 cup brown sugar
2 cups zucchini, grated
3 bananas, mashed
3 tbs maple syrup
3 eggs
1 cup oatmeal, dry
2 tsp cinnamon
2 tsp baking soda
2 tsp baking powder
3 cups flour

Recipe Directions for Camille's Easy B.Z. Bread

  1. Combine first 7 ingredients. Stir well.

  2. Combine dry ingredients, add to wet ingredients, and mix well.

  3. Pour into 2 greased loaf pans and bake at 350 degrees for about 1 hour, or until toothpick comes out clean.
