makes a WONDERFUL veggie calzoni. I used bell peppers, mushrooms, onions, garlic, and spinach.

Recipe Ingredients for calzoni pugliesi

2 1/2 t yeast
4 t sugar
4 T water, warm
1 c milk, warm 110 degrees
1 egg
3 3/4 c flour
1 1/2 t salt

Recipe Directions for calzoni pugliesi

  1. Stir yeast, sugar and water together in mixing bowl; let stand til foamy. Mix in milk and egg with the paddle.

  2. Add flour and salt and mix til comes together adding 1 T more water, if needed.

  3. Change to dough hook and knead at medium speed until sofy, velvety, strong, and elastic, about 3 min.

  4. Let rise in lightly greased bowl til doubled, about 2 hours.

  5. Preheat oven to 450 and place cast iron griddle on top rack.

  6. Cut into 8 pieces and roll into circles. Fill with filling of choice. Seal with egg wash (1 egg lightly beaten).

  7. Place on griddle and bake 10-20 min til golden brown and cooked thru.
