Recipe Ingredients for Calzones - tomato, basil & mozzarella

1 1/2 c water
2 1/4 t active dry yeast
2 1/4 t kosher salt
2 c flour
1 1/4 c whole wheat flour
8 oz
5 small tomatoes
1/4 c fresh basil

Recipe Directions for Calzones - tomato, basil & mozzarella

  1. mix H2O & yeast in a large bowl. mix in salt, then flours. No kneading required. Cover w/plastic wrap or kitchen towel and let rise until doubled in size, approx. 2 hrs.

  2. meanwhile, prepare filling. Wash basil, wash & slice tomatoes, grate mozzarella.

  3. When dough is ready, preheat oven to 425F. Line 2 baking sheets w/parchment paper. Divide dough into 6 pieces. On a clean, well floured surface, roll out each piece of dough into circles approx. 4" round and 1/4" thick.

  4. Top 1/2 each circle with tomatoes, basil and cheese (approx. 1/2 C filling each). Leave 1/2" border. Fold other half of dough over toppings. Using thumb and forefinger, roll bottom edge, pinching to seal. Cut 2-3 slits in top of each with a sharp knife.

  5. Bake 10-15 mins. or until crust is golden brown and cheese is melted. Let cool 10 mins., then serve.
