Calzone Recipe

Traditional Italian style calzone. Change the vegetables for the filling to your own tastes.

Recipe Ingredients for Calzone

4 1/2 cups of Flour
2 tbsp of Honey
1 tsp of Salt
1 1/4 cups of Water
1/2 cups of Ricotta Cheese
1 pound of Italian Sausage
50 slices of Pepperoni
1 cup diced Onion
1 cup sliced Green Pepper
1 cup of Mozzarella Cheese
1/2 cup of Pizza Sauce

Recipe Directions for Calzone

  1. Prepare the dough. - Combine 1.25 cups of water, 1 tsp of salt, 2 tbsp of honey in a mixing bowl.

  2. Add 1 cup of flour and combine

  3. Add rest of flour and mix with dough hook until dough no longer sticks to the sides of the bowl. If dough sticks to the side of the bowl add more water 1 tbsp at a time, if dough is runny or like batter add more flour 1 tbsp at a time.

  4. Remove dough from bowl and knead

  5. Place dough into bowl and cover with damp towel for 45 minutes

  6. Reknead dough and place back into bowl under the towel for another 45 minutes.

  7. Roll dough out into 10" circles

  8. Place baking stone in oven at highest setting.

  9. Brown sausage in pan while filling the dough with Ricotta Cheese, Pepperoni, Onion, Green Pepper, and Mozzarella Cheese and Sauce. (Only place toppings on one half of the the dough)

  10. After browned add sausage to dough. Fold over and seal dough into a pocket.

  11. Remove pizza stone from oven and place un-cooked calzones onto it, return to oven, reset to 375˚ and cook for 20-25minutes.
