Recipe Ingredients for Calypso Shrimp


BEAN SALSA:
15 oz black beans, rinsed/drained
1 cup mango, peeled/chopped
1 small red bell pepper
1/4 cup green onions, sliced (2-3 medium onions)
2 tbsp orange juice
1 tbsp red wine vinegar
1/2 tsp orange peel, grated

SHRIMP:
1/2 tsp orange peel, grated
1 tbsp orange juice
1 tbsp vegetable oil
1/2 tsp dried thyme leaves
1 clove garlic, finely chopped
3/4 lb shrimp, peeled and deveined

Recipe Directions for Calypso Shrimp

  1. Combine all BEAN SALSA ingredients in medium bowl.

  2. Cover and set aside.

  3. Mix remaining ingredients (minus shrimp) in a medium bowl.

  4. Stir in shrimp.

  5. Spray 10-inch nonstick skillet with nonstick cooking spray.

  6. Heat over medium-high heat.

  7. Cook shrimp mixture in skillet, turning shrimp once, until done.

  8. Divide salsa on 4 serving plates and arrange shrimp on salsa.
