Rice with coconut milk and callaloo leaves (Yummie)

Recipe Ingredients for Callaloo Cookup

2 tbsp oil
5 cups water
1 onion
2 garlic cloves
1 lb Celery
1/4 tsp Paprika
5 oz Coconut milk
1 Salt and pepper
1 lb Rice
1/2 cups chopped red bell pepper, for garnish

Recipe Directions for Callaloo Cookup

  1. Add onion, garlic, taro leaves,callaloo,habaņero pepper, coconut milk and salt and pepper to taste.

  2. Simmer for 10 minutes.

  3. Add rice. Cover the pot, reduce the heat and simmer for about 30 minutes, until mixture "looks nice and green."

  4. Garnish with chopped red pepper.
