A light salad perfect for summer

Recipe Ingredients for Calimari salad

1/8 cup olive oil
1/4 cup lime juice
2 cloves garlic, pressed
1 pound squid, cleaned and cut into rings and tentacles
1 cup chopped celery
1/2 cup chopped fresh cilantro
1 green bell pepper, chopped
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 cup fresh green onions, chopped
1 cup chopped fresh parsley
1 cup hearts of palm
1 cup jicama
1 avocado
4 ounces Mandarin Oranges

Recipe Directions for Calimari salad

  1. Boil Squid until opaque

  2. Chop up squid and everything else into bite size pieces.

  3. Mix

  4. Share and enjoy

  5. Can add avocado, jalapeno, jicama, cilantro, mint, hearts of palm mandarin orange slices...lots of other things to tailor the taste to your preference...
