Creamy cheesy chicken soup with a California Twist. Use fresh vegetables, or replace with a 16 oz bag of "California style vegetables" -- broccoli, cauliflower and carrot mix. YUM for less than 260 calories per serving!

Recipe Ingredients for California Style Chicken Cheesy Vegetable Soup

1 tbl parsley flakes, divided
1 tbl garlic powder, divided
10 oz chicken thigh meat, cooked and cubed
6 oz fresh cauliflower, broken in to pieces
7 oz fresh broccoli, stalks and flowerets, cut and broken into small pieces
2 medium carrots, peeled and cut into small pieces
1 cup frozen peas
10 1/2 oz (1 can) Fit & Active Cream of Mushroom Soup
10 1/2 oz (1 can) Fit & Active Cream of Chicken Soup
1/2 cup Cheese Whiz
3/4 cup 1% milk
3/4 cup Fit & Active chicken broth
1/2 tbl onion powder

Recipe Directions for California Style Chicken Cheesy Vegetable Soup

  1. Pre-cook chicken in microwave by placing in microwave safe dish, sprinkle with half of the parsley and garlic powder. Microwave on high 8 minutes. Turn chicken over, sprinkle with remaining parsley and garlic powder, cook on high for 5 minutes. Remove chicken to paper towel-lined plate to drain for 5 minutes. Cut into bite-sized pieces and put in crock pot.

  2. Cut fresh cauliflower and broccoli into bite-sized chunks. Microwave in medium bowl with carrots until tender/crisp, about 5 minutes on high. Add to crock pot, together with frozen peas.

  3. In medium bowl, combine soups and Cheese Whiz. Stir in milk, chicken broth, and onion powder. Pour over chicken and vegetables in crock pot. Stir until well-blended. Cook on high for 3-4 hours, or low 6-8 hours, or until all vegetables are fork tender.

  4. Serve.
