California Rice Casserole Recipe

Wonderfully flavorful addition to summer meals. High in protein, Vitamin A, and iron. Unfortunately, also high in saturated fat and fairly high calories.

Recipe Ingredients for California Rice Casserole

2 cups uncooked long grain rice
1/4 cup Smart Balance
1 large onion, diced
16 oz. reduced fat sour cream
8 oz. non-fat cottage cheese
3 cups shredded reduced-fat cheddar cheese
12 oz. mild green chilies

Recipe Directions for California Rice Casserole

Cook rice according to package directions, adding no salt. Melt smart balance in large skillet. Add chopped onion to the fat and saute until onion becomes translucent. Remove from heat. Add cooked rice to the skillet with the onions. Stir until onions are mixed through. Then add sour cream and cottage cheese to the rice mixture. Layer half the rice into a 3 quart .casserole. Spread the green chilies over the layer of rice. Then add half of the shredded cheese. Layer the remaining rice over the cheese. Add remaining cheese. Place in oven at 350 degrees for 45 minutes to an hour until casserole is heated completely. If the cheese begins to get too dried and brown, cover with foil and bake until heated.
