Super yummy, spring or summer salad that will make you feel like you are on vacation!!

Recipe Ingredients for California Quinoa Salad

2 cups uncooked quinoa
1/2 cup raisins
1/2 cup shelled edamame
1/4 cup Almonds Whole Raw
1/2 cup chopped cilantro
1/4 cup chopped red onion
1 cup diced mango
3 tbs lime juice
1/2 tsp canola oil
4 tbs Organic Coconut Flakes

Recipe Directions for California Quinoa Salad

Bring 4 cups of water to a boil, add the quinoa and raisins. While quinoa is cooking chop all other ingredients and combine them in a large bowl. Add half lime juice and all canola oil, stir. When quinoa is cooked remove from heat and add frozen shelled edamame to warm quinoa to thaw. When the quinoa, raisin, edamame have cooled add to the bowl. Add the rest of the lime juice and the coconut flakes, stir and serve.
