Delicious vegetable quiche for picky vegetarians, but not vegan friendly.

Recipe Ingredients for California Quiche

1 crust Pillsbury Pie Crusts All Ready Rolled
6 oz Artichoke Hearts Marinated
1 small Squash, Summer, Zucchini, Includes Skin
1 small Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
4 large Egg, Whole
1 cup Cream, Fluid, Half And Half
0.5 cup Milk, Nonfat, Fluid
0.5 tsp Savory, Ground
0.5 tsp Pepper, Black
1 cup, shredded Cheddar Cheese

Recipe Directions for California Quiche

  1. Drain artichokes reserving 2T of the marinade,

  2. Cut artichokes in quarters.

  3. Sautee zucchini, onion, and pepper in the reserved marinade until tender.

  4. Beat eggs in medium bowl until foamy.

  5. Stir in milk, cream, savory, and pepper.

  6. Spoon zucchini mixture into pastry shell; add artichokes on top.

  7. Sprinkle cheese over veggies.

  8. Pour egg and cream mixture over veggies and cheese.

  9. Bake in a preheated 425 degree oven for 15 minutes.

  10. Lower heat to 350 degrees and bake for 20 more minutes until knife inserted in middle comes out clean.
