This is a true Cali-style burrito?with lots of Yummy guacamole.

Recipe Ingredients for California Ensalada Burritos

1 small red onion, thinly sliced into rings
1/4 cup distilled white vinegar
1/3 cup fresh lime juice
2 tbs. fresh lime juice
1/4 cup cilantro leaves
2 clove garlic
2 tbs. olive oil
2 avocado,+NS+as+to+Florida+or+California avocados
6 cups Spinach
1 1/2 cups shredded cabbage
10 radishes, thinly sliced
2 tomato, quartered and sliced
3 carrot, peeled
15 serving (Dempsters) Ancient Grains Tortillas

Recipe Directions for California Ensalada Burritos

  1. Stir together onion, vinegar, 1/3 cup lime juice, and salt in bowl. Cover, and chill 20 minutes, stirring occasionally.

  2. Meanwhile, blend cilantro, garlic, and remaining 2 Tbs. lime juice in food processor until garlic is minced. With processor running, slowly pour in oil until dressing is well blended. Add avocado chucks to processor and pulse.

  3. Toss cut spinach, grated cabbage, grated radishes, thinly chopped tomatoes, and grated carrots in large bowl with guacamole.

  6. Remove onions from marinade with fork, and divide sliced onions among tortillas. Roll up tortillas, leaving one end open.
