Recipe Ingredients for California Chicken Sandwiches

1/3 cup fat free mayo
2 tablespoons orange juice concentrate
1 teaspoon lime juice
1/2 tsp cumin
1/8 tsp hot sauce
12 oz boneless skinless chicken breasts
1/4 teaspoon salt
1/8 tsp black pepper
12 oz sourdough bread
4 romaine leaves
2 plum tomatoes
3 oz avacado

Recipe Directions for California Chicken Sandwiches

  1. To prepare citrus mayo, combine first five ingredients in a small bowl.

  2. Cook chicken in a non-stick skillet sprayed with cooking spray.

  3. Remove and let rest for at least 3 minutes under foil before slicing diagonally across the grain into thin slices.

  4. Toast bread and spread citrus mayo on each slice. Top each sandwich with lettuce, 1 sliced chicken breast, 2 tomato slices, and 2 avocado slices.
