A different twist to classic chili.

Recipe Ingredients for Calico Beans

1 lb extra lean ground beef
1 lb bacon
1 medium onion
1/2 cup ketchup
1 tsp salt
3/4 cup brown sugar
1 tsp dry mustard
2 tsp vinegar
16 oz kidney beans
16 oz baked beans
16 oz lima beans
8 oz chick peas
2 fresh tomatoes
2 cups grated light cheddar cheese

Recipe Directions for Calico Beans

  1. Cook bacon and onion until bacon is nice and crisp (reserve half for topping).

  2. Cook ground been in bacon drippings.

  3. Mix all ingredients together except beans.

  4. Partially drain beans (leaving some liquid) and add to mixture.

  5. Pour into a casserole dish and sprinkle crumbled bacon and cheddar cheese.

  6. Bake (covered) at 350 for 40 minutes.

  7. Uncover and sprinkle with additional cheese and serve when bubbling.
