Recipe Ingredients for Caldo Verde

32 ounces potatoes, chopped in large pieces
1 tsp olive oil
3 ounces chorizo, chopped
1 1/2 tsp red pepper flakes
12 ounces red onions, chopped
4 cloves garlic, miced
8 ounces carrots, chopped
6 ounces lentils
2 quarts water or chicken stock
8 ounces kale
1 1/2 tsp paprika
1 salt

Recipe Directions for Caldo Verde

  1. Bring a pot of water to a boil. Cook potatoes until fork tender, drain, and set aside.

  2. Heat oil in the empty pot. Add chorizo and heat through. Add pepper flakes, onions, garlic and carrots. Cook until onions become tender.

  3. Add lentils to the pot and toast just a moment. Add chicken stock and bring to a simmer. Cook until carrots are tender.

  4. Stir chopped kale, smoked paprika and salt into the soup. Cover with a tight-fitting lid and allow the kale to wilt.

  5. Add the cooked potatoes and continue to serve
