Healthy and hearty soup - lots of vitamins and potassium. Not authentic as I add Cannellini beans to it. Easy to make and all it needs is some crusty multigrain bread to make a filling meal!

Recipe Ingredients for Caldo Verde - Portuguese Kale Soup

31 1/2 g chorizo, sliced thin
1/2 medium onion, chopped
1 tsp olive oil
1 clove garlic, minced
1 cup kale, chopped
12 oz cannellini beans, drained
1 medium potato, cubed
1 cup low sodium chicken stock
3 cups water
1/4 tsp pepper
1/4 tsp paprika, smoked spanish

Recipe Directions for Caldo Verde - Portuguese Kale Soup

Heat olive oil in pot, add sliced chorizo and brown. Add onion and garlic and saute for a few minutes, until turning transparent. Add chicken stock, kale, cannellini beans and potato and simmer for 5 minutes. Then add water and spices and simmer until potato is soft.
