6 medium potatoes 1 medium onion-minced 1 clove garlic 4 cups kale julliened 1/2 pkg turkey kielbasa

Recipe Ingredients for Caldo Verde Low fat

6 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
4 serving Fully Cooked Lean Turkey Kielbasa
4 cup, chopped Kale
4 serving Extra Virgin Olive Oil
1 medium Onions
1 clove Garlic

Recipe Directions for Caldo Verde Low fat

  1. in a large skillet, saute onion and garlic in 3 Tbsp olive oil for 3 minutes

  2. peel and thinly slice potato

  3. Add potato slices to onion and garlice

  4. cook 5 minutes stirring constantly

  5. add 2 quarts cold water

  6. bring to boil then boil low til potatoes mushy

  7. julienne Kale and rinse

  8. mash or puree potato mixture

  9. Add salt and pepper to taste

  10. cover and simmer 5 minutes

  11. Just before serving, add kale and cook 5 minutes more
