Latin American chicken soup. Sort of like tortilla soup, only without cheese, and chips. Very good on a cold day.

Recipe Ingredients for Caldo De Pollo

25 cups (200 oz.) of water
3 lb (1360.777g)chicken
12 tsp Knorr Chicken Bouillon
2 Potato, large
2 Carrots large (7-1/4" to 8-1/2" long)
1/2 large Onions, raw,
2 tomato, large (chopped)
1/2 cup (10g) cilantro leaves, shredded
1 cup of raw celery
2 Zucchini (sliced)

Recipe Directions for Caldo De Pollo

  1. Remove skin from the chicken wash and cut up in small pieces. I.E. drumstick, chicken breast, wing...etc

  2. Place chicken in a large pot with water, chopped union,cilantro, celery (chopped) and Knorr bouillon.

  3. Let it cook on high for about 20minutes.

  4. Add tomato(chopped), the potato (in large cubes) and Zucchin (sliced or chopped).

  5. Reduce heat to medium (6 on an electric stove), and let it completely cook for another 20minutes. The longer you let it cook on lower temperatures, the juicier the chicken. MUCHO GUSTO!

  6. Note: Goya and McCormick make small envelopes that you can add to the soup, for a more Latin flavor. Goyas package is for Caldo de Pollo, and McCormick is called Sazon with Coriander and Anatto.
