One of my favorite Indian dishes to make at home. Here's a version with loligo squid.

Recipe Ingredients for Calamari Saag

1 onion
3 cloves garlic
400 g crushed tomatoes
30 oz frozen chopped spinach
1 T curry powder
1 T ground ginger
1 tsp cayenne pepper
1 T chili powder
1 lb squid
8 cups stock

Recipe Directions for Calamari Saag

  1. Cook onion until translucent

  2. Add garlic and cook with onion until both caramelized

  3. As onion and garlic cool, puree spinach, set aside

  4. Puree onion and garlic

  5. Put onion and garlic, plus spinach, in large pot

  6. Add tomatoes, spices, broth and mix well

  7. Simmer until it's done

  8. Arrange sliced squid under the surface

  9. Turn off heat

  10. Let rest until squid is just cooked
