Recipe Ingredients for Calamari, arugula, white bean and red onion salad

1/2 pound squid (calamari), sliced into rings
2 tablespoons extra-virgin olive oil
3 tablespoons lemon juice
1 tablespoon apple cider vinegar
14 1/2 ounces white beans, drained
1/2 red onion, sliced
2 1/2 ounces baby arugula

Recipe Directions for Calamari, arugula, white bean and red onion salad

  1. Whisk liquid ingredients in a medium bowl and season to taste with salt, pepper, and a little sugar if desired.

  2. Add the calamari, red onions and white beans (great northern worked well). Marinate in the refridgerator for about an hour.

  3. Just before serving, toss with the baby arugula.
