An easy, low-fat chicken stew with a Mexican flair.

Recipe Ingredients for Calabasa y Pollo (Chicken & Squash Stew)

4 breast, bone and skin removed Chicken, Breast, Meat Only
12 oz Tomatoes Whole No Salt Added
1 cup, chopped Onions
1/4 cup, chopped Peppers, Sweet, Red
1 tsp California Style Minced Garlic made from Fresh Garlic
1 serving Ground Cumin
1 tsp Oregano, Ground
1 fruit (2" dia) Limes
1 cup Mexican Squash
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Calabasa y Pollo (Chicken & Squash Stew)

Chop chicken and cook in olive oil until almost done. Remove from pan, and saute 1 cup of chopped onion, and tsp. of minced garlic. Add chicken back to pan, with tomatoes, spices, and peppers. Cook about 10 minutes, uncovered. Add sliced squash and lime juice. Cover and cook about 10 more minutes.
