Recipe Ingredients for Calabacitas

1 pat (1" sq, 1/3" high) Butter
1 tbsp chopped Onions
2 tbsp Green Chiles
3/4 cup Yellow Squash
1/2 cup Corn, Sweet, Yellow
1/2 cup Diced Tomatoes
1 oz Mexican Style Four Cheese

Recipe Directions for Calabacitas

  1. Preheat oven to 350 degrees

  2. melt butter in frying pan and saute onion until tender.

  3. cook corn; steam squash until just tender

  4. Combine all ingredients except cheese and transfer to a casserole dish

  5. Cook for 20 minutes

  6. add cheese and bake until cheese melts
