Medley of corn, peppers, & squash. Could use chayote in place of zucchini.

Recipe Ingredients for Calabacitas

1 tbsp canola oil
4 cups zucchini
2 cups yellow corn, frozen
1 cup onion, diced
1 garlic clove
4 ounce green chilies, roasted & diced
1 tbsp chopped jalapeno
1 salt, pepper, & cumin to taste

Recipe Directions for Calabacitas

  1. Chop veggies.

  2. Sautee onions, garlic, & jalapeno until softened. Add corn & zucchini and sautee until zucchini is tender. Season with salt, pepper, & cumin to taste.
