Pork stewed in a tomato broth with zucchini & corn.

Recipe Ingredients for Calabacita

4 chop, excluding refuse (yield from 1 raw chop, with refuse, weig Pork, Fresh, Loin, Top Loin (Chops), Boneless
8 oz Tomato Sauce
1 can (12 oz) yields Corn, Sweet, Yellow
2 large raw Zucchini
1 serving Garlic Salt
3 tsp Pepper, Black
1 serving Ground Cumin

Recipe Directions for Calabacita

Cut up the pork chops into small bite size pieces. Brown over medium heat in a non-stick pan. Add spices. Once the pork is nice and brown (not too crispy) add the tomato sauce and add some water less for thicker sauce more for soupy, simmer for about 15 minutes. Add zucchini and let cook until zucchini is tender but not mushy. Add the corn and let heat through.
