A variation on a family recipe for "suicide potatoes," named for their tendency to jump off the rack into the fire when grilled. They are best grilled, but also do well as baked potato cubes or wedges. For best flavor use Tony Chachere's cajun seasoning.

Recipe Ingredients for Cajun Sweet Potato Wedges

4 medium sweet potatoes, cut lengthwise into 1/8 wedges (if baked) or sliced horizontally to 1/4 inch (if grilled)
15 sprays olive oil
1 teaspoon cajun seasoning, to taste

Recipe Directions for Cajun Sweet Potato Wedges

  1. For baked potatoes, preheat oven to 400 degrees. Slice potatoes into 8 wedges each. Line a baking sheet with foil. Spray the foil with enough oil to lightly coat, then place potato pieces evenly across pan. Use remaining olive oil sprays to coat potato cubes. Sprinkle with cajun seasoning to taste (and depending on brand). Bake until fork tender, about 20 minutes.

  2. For grilled potatoes, spray rack lightly with oil, then preheat grill to medium heat. Slice potatoes horizontally across (not lengthwise) about 1/4 inch thick. Lay flat on a cookie sheet, and spray lightly with olive oil. Sprinkle with cajun seasoning to taste. Repeat process until all slices have been treated. Place directly on upper grill rack, for approximately 5 minutes on the first side, and then turn for approximately 2 minutes, until tender.
