A lighter peppier version of eggplant parmesan.

Recipe Ingredients for Cajun Style Eggplant Parmesan

40 ounce eggplants, peeled & sliced
3 tablespoons light olive oil
1/2 cup pasta sauce
1 tsp. black pepper
1/4 tsp. red pepper
20 basil leaves, chopped
1/2 cup 2% mozzarella cheese
1 tablespoon parmesan

Recipe Directions for Cajun Style Eggplant Parmesan

  1. Line 2 jelly roll pans or heavy baking tray with parchment paper. Preheat oven to 425. Put Eggplant on trays and brush with olive oil. Bake 30 minutes or until softened.

  2. While eggplant bakes finely chop basil and stir pepper into pasta sauce. Take eggplant from oven when softened.Increase oven to 425.

  3. Spoon sauce over eggplant slices. Top each slice with basil and mozzarella cheese. Return eggplant to oven until browned about 15 minutes. Sprinkle parmesan over eggplant. Serve immediately.
