Recipe Ingredients for Cajun Skillet Beans

1 medium Onions
3 clove Garlic
2 tbsp Vegetable Oil, Canola
3 stalk, medium (7-1/2" - 8" long) Celery
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1/2 teaspoon Thyme
1/2 tsp Oregano, Ground
1/4 tsp Pepper, Black
0.13 tsp Pepper, Red Or Cayenne
1/4 tsp Kosher Salt
1 3/4 cup Stewed Tomatoes, No Salt Added
1 tbsp Honey, Strained Or Extracted
3 tsp Country Dijon Mustard
3 1/2 cup Black Eyed Peas, Organic

Recipe Directions for Cajun Skillet Beans

  1. In a heavy saucepan or skillet, saute the onions and garlic in the oil on medium heat.

  2. Chop the celery and bell peppers, and add them to the pan.

  3. Continue to saute for about 5 minutes, stirring occasionally.

  4. Add the thyme, oregano, black pepper, cayenne, and salt.

  5. Cover and cook for 5 minutes or until the onions are golden, stirring once or twice.

  6. Add the tomatoes, honey or molasses, and mustard, and simmer for 5 more minutes.

  7. Add the beans, cover, and stir occasionally until thoroughly heated.

  8. Canned beans will be hot in less than 10 minutes, but frozen beans need to simmer for 15-20 minutes.

  9. Top with scallions and grated cheese if you like, and serve.
