Recipe Ingredients for Cajun Skillet Beans

1 medium onion, chopped
2 cloves garlic, minced
1/2 tsp olive oil
3 celery stalks, chopped
2 green bell peppers, chopped
1 tsp fresh thyme, chopped
1 tbsp fresh basil, chopped
1/2 tsp dried oregano
1/4 tsp ground black pepper
1 pinch cayenne pepper
1 Salt
2 c tomatoes, chopped
1 tbsp honey
1 tbsp Dijon mustard
4 c cooked black-eyed peas
1/4 c Diced scallions
1/2 c Grated cheddar cheese

Recipe Directions for Cajun Skillet Beans

  1. Coat skillet with oil and sauté onions and garlic over medium heat. Add celery and peppers; sauté 5 minutes. Add thyme, basil, oregano, black pepper, cayenne and salt. Cover and cook for 5 minutes or until onions are golden, stirring twice.

  2. Add tomatoes, honey/molasses and mustard, and simmer another 5 minutes. Add beans, cover and stir occasionally until heather through. Top with scallions and/or grated cheese.
