Recipe Ingredients for Cajun Salmon-6 oz portion

24 ounces salmon (4 boneless skinless filets)
4 servings cooking spray, olive oil flavor
1 tablespoon cajun seasoning (I prefer Paul Prudhomme's seafood or chicken seasoning)
1/4 cup water

Recipe Directions for Cajun Salmon-6 oz portion

Wash and pat dry filets. Spray skillet with cooking spray and heat to medium high. Spray filets lightly with cooking spray, and sprinkle evenly on both sides with seasoning. Cook 2-3 minutes on each side to brown lightly, but filets should remain pink in center. Add water, and cook partially covered until water evaporates, about another 3-5 minutes (cooking times depend on thickness of filets). Filets should be fully cooked but moist.
