My improvised recipe for Louisiana style Red Beans.

Recipe Ingredients for Cajun Red Beans

1 tbsp, Olive Oil
16 oz. Red Beans (Small)
8 oz. Turkey Andouille Sausage
2 cup, chopped Onions
3 clove Garlic
1/2 cup, diced Celery
1 cup, chopped Peppers, Sweet, Green
32 oz, Chicken Broth, low sodium
2 tsp, crumbled Bay Leaf
4 slices, WF Bacon

Recipe Directions for Cajun Red Beans

  1. Heat olive oil in large heavy bottomed pot or dutch oven.

  2. Add bacon and heat until fat has rendered. Remove bacon. Repeat with sausage.

  3. Add onions, peppers and celery and saute.

  4. Add garlic and saute until fragrant (about 30 seconds).

  5. Add beans, broth, bay leaf and two cups water to pan. Bring to boil and reduce to vigorous simmer.

  6. Cover and simmer for 90 minutes or until beans are tender.
