Cajun red beans served over brown rice

Recipe Ingredients for Cajun Red Beans

1 lb dry red beans
1 medium onion
1 red pepper
3 tbs Cajun Seasoning
3 cups beef broth
5 c. water
1/2 lb Italian sausage
2 1/2 cups brown rice (uncooked)
1 tbs Worchestershire sauce

Recipe Directions for Cajun Red Beans

  1. Soak red beans overnight.

  2. Chop red pepper and onion and add to rinsed beans in a crock pot.

  3. Add 3 tbs cajun seasoning, Worchestershire sauce, and 3 cups beef broth (or 3 beef boullion cubes).

  4. Cook on low for 8-10 hours.

  5. Chop up Italian sausage, add to beans, and allow to simmer for another hour.

  6. Serve over cooked rice.
