These potatoes are known in my family as "suicide potatoes" because when they are grilled, they tend to jump off the rack into the fire. They are best grilled, but also do well as baked potato cubes or wedges. For best flavor use Tony Chachere's Cajun seasoning.

Recipe Ingredients for Cajun Potatoes

15 ounces russet potatoes, unpeeled, in 1 inch cubes (if baked) or sliced horizontally to 1/4 inch (if grilled)
1 tablespoon olive oil
1/2 teaspoon cajun seasoning, to taste

Recipe Directions for Cajun Potatoes

  1. For baked potatoes, preheat oven to 400 degrees. Cube potatoes into 1 inch pieces, and toss in olive oil. Line a baking sheet with foil. Place potato cubes evenly across pan. Sprinkle with Cajun seasoning to taste (and depending on brand). Bake until fork tender, about 20 minutes.

  2. For grilled potatoes, spray rack lightly with oil, then preheat grill to medium heat. Slice potatoes horizontally across (not lengthwise) about 1/4 inch thick. Lay flat on a cookie sheet, and spray lightly with olive oil. Sprinkle with cajun seasoning to taste. Repeat process until all slices have been treated. Place directly on upper grill rack, for approximately 5 minutes on the first side, and then turn for approximately 2 minutes, until tender.
