Cajun spiced tilapia roasted in foil with lemon juice, carrots, onions and broccoli.

Recipe Ingredients for Cajun Hobo Tilapia with Carrots & Broccoli

1 1/2 lbs Tilapia
5 1/2 oz. carrots, chopped
7 oz. broccoli florets
1 oz. yellow onion, sliced
2 tbsp. lemon juice
1 1/2 tbsp. Old Bay Seasoning

Recipe Directions for Cajun Hobo Tilapia with Carrots & Broccoli

  1. take a sheet of foil large enough to wrap all of your fish and veggies in and place in baking dish.

  2. Place veggies on top of foil.

  3. Soak fillets in lemon juice and cover both sides with Old Bay.

  4. Place fillets on top of veggies and pour any remaining lemon juice over the top.

  5. Take sides of foil and fold over, making a package of fish & veggies.

  6. bake at 400 for 25 minutes
