Thick, hearty dish, thicker than stew, and definitely not soup.

Recipe Ingredients for Cajun Gumbo, not soup

3 oz chicken breast
3 oz shrimp
1 cup bell pepper, diced
1/2 cup onion, diced
1 cup canned tomatoes
1/2 cup canned okra
1/2 cup canned corn
1 tbsp olive oil
1 tbsp cajun seasonings

Recipe Directions for Cajun Gumbo, not soup

  1. Cut chicken breast into bite sized pieces.

  2. Heat olive oil in large skillet. Sauté chicken, bell pepper, and onion until vegetables are wilted and chicken is partially cooked.

  3. Add shrimp, and canned vegetables. Cover and simmer 5 minutes or until chicken and shrimp are done. If using precooked shrimp, don't add it until the last 2 minutes of cooking. Stir in cajun seasonings to taste.

  4. May serve with rice or Miracle noodles for a lower-carb dish.
