Great way to use fresh tomatoes. You can use a can of diced tomatoes if that's all you have - just increase the amount of tomato paste. Don't be shy with the cajun seasoning if you want it spicy.

Recipe Ingredients for Cajun Chicken Pasta

2 teaspoons garlic, crushed
8 oz. boneless chicken breast, cut into thin strips
1 lb. fresh tomatoes, chopped (~3 Medium Tomatoes)
1/2 cup chopped onion
1/2 cup sliced celery (with leaves)
1/2 cup chopped green pepper
1/4 cup tomato paste
1 tablespoon cajun seasoning
1 teaspoon bay leaf

Recipe Directions for Cajun Chicken Pasta

  1. Cook 8 oz. of your choice of pasta al dente

  2. In a large skillet stir fry garlic & chicken about 3 minutes

  3. Reduce heat to low & add all ingredients except the pasta - cover and simmer about 10 minutes until veggies are tender

  4. Toss gently with pasta and remove bay leaf
