Recipe Ingredients for cajun black eyed peas

1 tsp olive oil
1 onion, chopped
3 cloves garlic, minced or pressed
3 stalks celery, chopped
2 bell peppers, any color, chopped
1/2 tsp cayenne pepper (or more or less to taste)
1 tsp dried basil
1/2 tsp dried thyme
1/2 tsp dried oregano
4 cups black beans (2 cans, drained and rinsed)
2 tomatoes, chopped
1 tbsp Dijon mustard

Recipe Directions for cajun black eyed peas

  1. Heat oil in a skillet over medium heat. Add onion and garlic and sauté for 5 minutes. Add celery, bell peppers and spices and cook for 5 more minutes, then lower the heat and cover. Cook until veggies are tender, adding a few tablespoons of water if it starts to stick.

  2. Uncover, raise heat to medium, and stir in beans, tomatoes and mustard and cook until hot.
