Recipe Ingredients for Cajun Black Eyed Peas

1 1/5 pounds black eyed peas, dry
1/2 pound smoked sausage , chopped
200 grams onion, chopped
1 teaspoon black pepper
1 teaspoon Tabasco sauce
2 cloves garlic, peeled
9 cups water
1/4 cup parsley, chopped
1/4 cup green onions, chopped

Recipe Directions for Cajun Black Eyed Peas

  1. Combine all ingredients except parsley and green onions in a large pot. Bring to boil, reduce heat and simmer until beans are done, about 2 hours.

  2. Add parsley and green onions, simmer about 5 minutes.

  3. Can serve with cooked rice.
