Great comfort food. Can be refrigerated overnight, adjust baking time by 5-10 minutes.

Recipe Ingredients for Caitlin's Mac and Cheese

1 1/2 cups macaroni
1/4 cup butter, unsalted
3 tbsp flour
1 cup milk, 1%
1 1/2 cups cheese, cheddar and colby jack
1 cup ham, diced
1 tsp salt
1 tsp pepper
1/4 tsp cayenne pepper

Recipe Directions for Caitlin's Mac and Cheese

  1. Preheat oven to 350 degrees

  2. bring large pot of lightly salted water to a boil, add pasta, cook for 8-10 minute, drain.

  3. in a medium saucepan, melt butter over low heat. Stir in flour until well blended. Whisk in milk a little at a time. Bring to a boil. Mix in salt, pepper, and cayenne. Stir frequently until sauce thickens.

  4. Remove pan from heat and stir in 1 cup of cheese and ham.

  5. Combine pasta with sauce, stir well.

  6. pour into baking dish, top with remaining cheese.

  7. bake for 30-40 minutes until top has reached desired crispiness.

  8. let rest 20 minutes before serving.
