Recipe Ingredients for Caesar "Lite" Salad-Emeril Lagasse

1/3 cup extra-virgin olive oil
3/4 tsps garlic, minced
1 tbsps white wine vinegar
1/2 tbsp Dijon mustard
1/2 tbsp balsamic vinegar
1/2 tsp lemon zest
1/2 tsp sugar
1/4 tsp italian seasoning
1/8 tsp salt
1/16 tsp pepper
5 cups romaine lettuce, torn
1/4 cup grated Parmesan cheese

Recipe Directions for Caesar "Lite" Salad-Emeril Lagasse

  1. In a mixing bowl combine the white vinegar, mustard, balsamic vinegar, lemon zest, sugar, Italian seasoning, salt, pepper, garlic and whisk to blend.

  2. Add the olive oil in a thin, steady stream, whisking constantly until thoroughly blended and smooth.

  3. Toss to coat evenly.

  4. TOP WITH CHICKEN, IF YOU WOULD LIKE.
