Recipe Ingredients for cacio e pepe

8 oz Spaghetti
4 tbsp Extra Virgin Olive Oil
2 tsp Pepper, Black
3 oz Romano
2 oz Parmesan, Shredded Cheese

Recipe Directions for cacio e pepe

  1. Cook pasta al dente in salted water. Drain reserving the pasta water.

  2. Heat oil in large skillet. Add cracked pepper and stir until fragrant (about 2 min). Ladle about 3/4 cup of the pasta water into the oil and pepper. Stir and continue to cook for another minute, bringing it to a boil. Transfer pasta to skillet with tongs. Separate and coat. This should be a bit wet. Sprinkle all of the cheese over the pasta and incorporate until smooth. Reduce or turn off heat entirely if needed. Add pasta water if consistency is not smooth.

  3. Serve immediately.
