Recipe Ingredients for Cacciatore

4 oz Rotini
18 oz Fresh Boneless Skinless Chicken Breasts
8 oz Mushrooms
1/2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 small Onions
2 clove Garlic
14 1/2 oz Tomatoes Diced No Salt Added
1 tbsp Parsley

Recipe Directions for Cacciatore

  1. Prepare pasta per package.

  2. Heat oil in nonstick frying pan over medium-high.

  3. Cut chicken into cubes. Add to frying pan. Cook until brown on all sides, about four minutes turning occasionally.

  4. Quarter mushrooms. Chop Onions and bell pepper.

  5. Transfer chicken to a bowl and add mushrooms, onions, pepper and garlic to pan. Reduce heat to medium, cover and cook for about 3 minutes.

  6. Uncover and cook for another 8 minutes till most of liquid evaporates.

  7. Stir in tomatoes and chicken from bowl with the juices. Reduce heat to a simmer.

  8. Drain pasta (when done) add to pan. Toss to combine. Serve with parsley sprinkled on top.
