More like Vegetable soup, and I roasted the garlic for a more milder flavor

Recipe Ingredients for Cabbage Vegetable Soup

1 head,+large+about+5-1/2"+dia Cabbage
8 oz green beans
16 oz carrot
1 onion
6 cloves garlic
64 oz Organic Vegetable Broth
6 large mushrooms
5 stalks celery
3 tomatoes

Recipe Directions for Cabbage Vegetable Soup

  1. Roast garlic.

  2. Chop onion,, carrots, green beans into 1" pieces, simmer in a large pot in the broth. Roast tomatoes, and steam. When cool peel skins, and chop reserving any juice for the soup (you can use canned if you like) add to the broth. Chop cabbage into 1" pieces, and add to the broth. Simmer 45-90 minutes until everything is soft and tender. Add any seasonings you like, I added a bit of seasoned salt.
