This is a healthy, high fiber casserole that I first tried at my mother in laws house. Had she not cooked it, I probably wouldn't have ever tried it. Serving size is 2 for this but they are HUGE servings, if serving with fruit or bread this easily can serve 4.

Recipe Ingredients for Cabbage/Turkey Casserole

1 lb. Turkey, ground extra lean
8 cups Cabbage, shredded (cole slaw style)
1 Onion, diced
2 tbls Pepper, black
1 cup Soup, Tomato, condensed
1 tbls Pepper, Crushed Red

Recipe Directions for Cabbage/Turkey Casserole

  1. Preheat Oven to 350 degrees

  2. Spray covered casserole dish with non-stick cooking spray

  3. Brown ground turkey and onions, until turkey is cooked and onions are tender

  4. Layer casserole dish with 4 cups shredded cabbage, sprinkle with 1 Tblsp black pepper and 1/2 Tbls Red Pepper

  5. Next, layer cooked turkey/onion

  6. Then add final layer of 4 cups shredded cabbage and sprinkle with remaining pepper

  7. Spoon condensed tomatoe soup on top.

  8. Cover

  9. Bake at 350 degrees for 65-75 minutes or until cabbage is tender.
