Recipe Ingredients for Cabbage and Tomato Soup

28 oz Diced Tomatoes in Juice
10 clove Garlic
4 oz Thyme, Fresh
1 cup, chopped Onions, Spring Or Scallions
8 oz Mushrooms
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
3 cup, chopped Cabbage

Recipe Directions for Cabbage and Tomato Soup

  1. Saute onions and garlic in large saucepan or cast-iron pot until onions sweat and garlic is fragrant (can use cooking oil for this, though a little water and a well seasoned cast-iron pot will keep them from sticking as well).

  2. Add carrots, celery and thyme (and any other fresh herbs or seasonings you are using); saute for an additional 5-6 minutes.

  3. Add chopped zucchini, cabbage and tomatoes; saute until ingredients equalize in temperature.

  4. Add beef broth and any additional dry spices. Serve when soup is at desired temperature.
