This cabbage vegetable medley is stewed in canned crushed tomatoes that have been infused with a mirepoix.

Recipe Ingredients for Cabbage & Tomato Medley

1 head, large (about 7" dia) Cabbage
28 oz Crushed Tomatoes with Basil
1 large Onions
3 stalk, large (11"-12" long) Celery
3 serving Extra Virgin Olive Oil
2 large (7-1/4" to 8-1/2" long) Carrots
2 serving Chicken Bouillon Cubes

Recipe Directions for Cabbage & Tomato Medley

Chop carrots, celery, onion. Add to a skillet in which you have heated 3 T olive oil. After vegetables are tender, add 28 oz can of crushed tomatoes. Season with garlic, oregano, basil, cajun seasoning, etc. Let simmer for about 10 minutes before adding cored cabbage that has been quartered, sliced thinly into crescents and then cut in half. Cook slowly for about 30 minutes or until cabbage has wilted to taste.
