One of those 'I'm sick, and have random things in the fridge/pantry to use up' recipes. Anyway, it's easy and delicious. I only wish I thought to throw in the lentils I had in the pantry before I made the soup, instead of after. Perhaps next time.

Recipe Ingredients for Cabbage Soup with Turkey Meatballs

16 cups cabbage, roughly chopped
1 small onion
1 tsp minced garlic
2 tbsp olive oil
1/2 pound ground turkey
1/3 cup oatmeal
2 tbsp soy sauce
1 egg
4 cups chicken stock
2 cups water
1 cup brown rice
1/2 cup orzo

Recipe Directions for Cabbage Soup with Turkey Meatballs

  1. Sautee chopped onion and garlic in olive oil in large pot on stovetop over medium heat.

  2. Halve and core cabbage heat, after removing outer leaves. Clean thoroughly and chop roughly.

  3. Mix together turkey, soy sauce, egg and oatmeal for meatballs.

  4. Throw cabbage into the pot, letting it cook down. Toss occasionally in the pot. Meanwhile, make the meatballs and set aside.

  5. After the cabbage has cooked down substatially, but while it still retains some green and crunch, pour chicken stock into the pot and add in water enough that the cabbage is just covered in liquid. Cover the pot and turn up the heat, bringing to a simmer.

  6. Once the soup is a-bubble, toss in meatballs. Let them cook a while, then throw in rice and orzo. Allow the soup to continue to simmer until the orzo is cooked adequately.

  7. Ladle into bowl and serve topped with grated parmesan, if desired.
